Dough Hacks is back – and @kathrynbricken just dropped a golden one! 👩🍳🍪 Dubai Cookies are here: a luxurious twist on our Blondie Ready to Bake Cookies, inspired by the iconic Dubai chocolate – with that crunchy-meets-creamy filling you won’t forget. Golden on the outside, gooey on the inside and dangerously easy to make!
Ingredients
- 2 packs of Doughlicious Blondie Ready to Bake Cookie Dough
- 75g kataifi pastry, chopped and separated
- 30g butter
- 180g pistachio paste
- 10g tahini
- A generous pinch of salt
Toast the kataifi
- In a pan, melt the butter over medium heat
- Add the kataifi pastry, breaking it up as you go
- Toast well, stirring frequently, for about 10 minutes or until golden and crunchy
Make the filling
- In a large bowl, mix the pistachio paste, tahini, and salt
- Add the toasted kataifi and mix until fully combined
- Shape the filling and roll the mixture into small balls
- Place them in the fridge to chill for about 30 minutes
Assemble the cookies
- Take two portions of Doughlicious Blondie Ready to Bake Cookie Dough and press them together to form a base on a baking tray
- Place one chilled filling ball in the center
- Top with two more portions of cookie dough, sealing the edges slightly
Bake
- Bake at 160°C (320°F) for 17–18 minutes, or until golden
