Dark Chocolate & Coconut Truffles

Ingredients

Double Chocolate Chip cookies, cooked according to packet instructions and left to cool completely

30 g desiccated coconut

100 g Lindt Excellence Dark Coconut Intense, chopped

25 g butter

5 tbsp double cream

100 g chocolate spread

To Decorate

100 g good quality milk chocolate, chopped

100 g good quality dark chocolate, chopped

Desiccated coconut

Method

???? Blitz the cookies and desiccated coconut in a blender until you have fine crumbs. Tip into a bowl and set aside.

???? Bring a pan of water to barely a simmer. Put the chopped chocolate, butter and cream into a heat proof bowl and set over the pan, ensuring the bottom of the bowl doesn’t come into contact with the water (or the chocolate will overheat).

???? Melt the chocolate mix, stirring often. Remove the bowl from the heat and stir in the chocolate spread until you have a smooth mix.

???? Add the blitzed coconut-cookie crumb mixture and stir to combine.

???? Cover with cling film and chill for 2 hours or until firm enough to shape.

???? Using a teaspoon, scoop out balls of the chocolate mix and, working quickly, shape into around 22 medium-sized balls – try not to handle too much as the heat will melt the chocolate. Transfer onto a baking sheet lined with greaseproof paper and chill for 30 minutes.

???? Meanwhile, bring a pan of water to barely a simmer. Put the chopped milk chocolate – for the coating – into a heat proof bowl and set over the pan, ensuring the bottom of the bowl doesn’t come into contact with the water (or the chocolate will overheat).

???? Melt the chocolate, stirring often. Remove the bowl from the heat. Repeat with the dark chocolate so that you have 2 bowls of melted chocolate.

???? Remove the truffles from the fridge and coat with the melted chocolate – you should have half milk and half dark. Sprinkle with desiccated coconut and leave to set.

Cook’s Tip

You could also coat with white chocolate for 3 different flavours of chocolate coating.
