Cookie Cinnamon Buns


Yeast Mixture:

1 cup (235g) lukewarm whole milk

21/4 tsp (7g ) instant yeast

Dry Ingredients:

4 cups (580g) all-purpose flour

1/2 cup (107g) granulated sugar

3/4 tsp (6g) fine sea salt

Wet Ingredients:

1/3 cup (84g) butter

2 eggs

1 egg yolk


1 Pack Doughlicious Chocolate Chip Cookie Dough

¼- ½ cup softened butter, salted

¼- ½ cup dark brown sugar

Egg and Cream Glaze:

1 egg

3 Tbsp Cream

Vanilla bean Glaze:

1 cup powder sugar

1 Tbsp Vanilla Pasta/ 2 tsp Vanilla extract

Pinch Salt

¼ cup double cream

Milk to loosen (if needed)

Milk Bun Dough:

Make the Yeast mixture, In a small bowl whisk together lukewarm whole milk and instant yeast

In a stand mixer bowl, whisk together dry ingredients

Using the dough hook attachment set on medium-low speed

Add the wet ingredients and yeast mixture

Mix for 2-3 minutes. On a lightly floured work surface and knead for 30-60 seconds. Plop into a greased bowl and cover with plastic wrap, let rise for 90 minutes


Brush with Egg and Cream Glaze

Bake in a 175C Fan preheated oven for 15-20 minutes.

Make simple Vanilla Glaze and set aside in a piping back for easy application

Let buns cool in the container for 15 minutes

Cover in Vanilla Glaze
