Plantain Purely Cookie Squares


  • Doughlicious Chocolate Chip Cookie Dough
  • Purely Plantain Salted Chips
  • 3 Tbsp Maple Syrup
  • 1/2 cup chocolate chips
  • 1 Tbsp coconut oil
  • Pinch salt

These cookie squares are filled with sensational flavours that will explode any taste buds. Packed with goodness, we used our Chocolate Chip Cookie Dough to bake this firm favourite


Cookie base

  • Preheat oven 160c Fan
  • Line your baking square with baking paper
  • Layer your cookie dough into the tin (room temperature cookie dough, roll between 2 pieces of baking paper for easy shaping)
  • Bake 15minutes
  • Fully cool before removing from mould (so gooey cookie doesn’t fall apart, can speed this up by using freezer)


  • Add your chips into a glass bowl
  • Add your maple syrup and toss evenly coating every chip
  • Place chips on a baking tray lined with baking paper
  • Bake for 8minutes
  • Allow to cool, chips will harden and get crunchy
  • Place chocolate and coconut oil in a microwave-safe bowl
  • Microwave 30-second bursts, twice


  • Place cookie layer on a piece of fresh baking paper
  • Use a fork to drizzle melted chocolate all over your cookie square
  • Sprinkle Caramelised Plantain Chips all over, more sizes more textures!
  • Finish with more drizzled chocolate
  • Transfer to a clean plate
  • Cut into squares
